Recipe: Chookas Chai Date & Walnut Loaf

We promised you the recipe for our 'Chookas Chai' Date and Walnut Loaf so... what better time to start our blog!
Yay...

 

We love cooking with tea - the possibilities are endless.

The weekend saw us crank this beautiful 'Chookas Chai' Date and Walnut Loaf.

The addition of our hand-blended organic masala chai puts a twist on Mum's famous recipe.

It really was amazeballs!

Mum's famous date and walnut loaf recipe using hot freshly brewed chai instead of water...

 

INGREDIENTS

1 x cup of dates - chopped finely

1 x cup of Brewed By Belinda's 'Chookas Chai' (prepared as per pack)

1 x cup of sugar

1 x tablespoon of butter

1 x teaspoon of bi-carb soda

1 x well beaten egg

2 x cups self raising flour - sifted

1 x cup of chopped walnuts

 

METHOD

Pre-heat oven to 180.C

Prepare a loaf tin.

 

Place chopped dates, sugar, butter and hot chai tea in a saucepan.

Warm until butter melts.

Add bi-carb soda. Stir.

Pour mixture over sifted flour.

Add egg and walnuts and stir to combine.

 

Pour mixture into loaf tin and bake for 1/2 - 3/4 hour until cooked through and golden.
